Chengdu, Sichuan 47. Chinese Fresh Fish Market No Chinese would ever buy a dead fish to eat. Fish are sold live and you take it home to kill and cook immediately. We once went by car out to the countryside to a fish restaurant. They fixed in succession about six fish, each fresh and fixed a different way. It was most delicious.
