Step 2, Select Split Pits

Split pit is a condition where the two halves of the peach pit split during the development of the fruit. A percentage of the fruit will have split pits. We select out those with split pits to do first. Those peaches will have a shorter shelf life. The split pit peaches will be peeled by hand after washing in cold water.
