Paul Noll, Ready to Can Paul gets Ready to Start Canning We get ready to start canning green beans. We have put the jars through the dishwasher and stacked them ready for filling. We have picked up our order of 100 pounds of green beans snipped and cut from the grower. We have them stacked them on the counter behind Paul. We put some salt, chopped fried bacon, in each jar. We will blanch a large kettle of beans and then place them in the jars. Using two pressure canners we cook seven quarts at a time. By having two canners we can cook one while the other is cooling. We generally can about 100 quarts in a day that last us for two years. I sit in my chair and keep an eye on the gauges and time in between canners going and coming. Back to Noll's Canning |
