Canning Strawberry Jam

3. Mash Strawberries

We use an old potato masher to mash the strawberries. We don't want to reduce the strawberries as if done by a blender but to make some mashed. The mashing also removes all air spaces so an accurate measurement can be achieved. Jams should have some solids.
