Fill Jars and Wipe Rim - 15

Heat the juice to be canned to 190 degrees F. Do not boil. We then use a 2-cup measuring cup to fill the jars with the juice. Fill the jar to a 1/4 inch headspace. Correct headspace is important in most all of canning. Then using a damp clean cloth Bernice wipes the rim of each jar as soon as Paul fills one. Having a clean rim is vital to get a good seal.
