This part sits on top of the boiling pan. The extracted juice will drip onto this collector and flow out the hose at the bottom. A clamp on the hose will allow you to temporarily halt the flow while you switch the container used to collect the juice. We sometimes use a pot if we process a small amount and plastic gallon jugs if we process a large amount of grapes.
