We chose a 2 pound piece of flank steak because it was cheap and had lots of lean beef. The first thing we did was to put it into the oven in a shallow pan lined with foil with a half inch of water. We set the oven at 350 degrees F. After a while we turned over the beef to brown it on the other side.
