Step Twelve, Set Jars on Paper to Cool

12 Steps to Canning Apricots

Step 11, Remove Rings and Wash Jars

The next day when the jars have cooled, check the lids for sealing. If a slight push in the center of the lid causes the lids to go down, the jar has not sealed. Either set it in the refrigerator for use or reprocess it with a new lid. Do check to see the rim has no chips. If it does replace the jar and discard the old one. The rings should be removed and the jar washed in warm water to remove syrup or fruit. This keeps the ants in check. The fruit should be stored in a cool dark place with the rings off. Rings on the jars can cause rust or corrosion so removal of the ring can be difficult. When you open the jar then put a ring back on if you don't use the entire jar.
