Canning Beef Barley Soup Step 1, Roast the Beef We used a 3 pound Boneless Rump Roast. This made the job of getting the beef ready for the soup much easier. We put the roast in a pan with foil in the oven for about 2 hours at 350 degrees F. We checked on the progress from time to time to take it out when done enough.
