Step 4, Dice or Slice the Beets

After Bernice peels the beets Paul will dice the beets into about 1/2 inch cubes or 1/4 inch slices. It is your choice. Pick your own size. As we dice them we fill the pint jars with an inch headspace. Pack them somewhat but don't mash them. When we have enough to fill the pressure canner we will pressure can them. Quarts require 35 minutes and pints 30 minutes at 10 pounds pressure.
