Use new lids.

Exact measurement of fruit.

Exact measurement of sugar.

Follow pectin instructions; we use powdered Sure-Jell.

Add Pectin.

Bring to hard rolling boil.

Add sugar.
-
Bring to hard rolling boil.
-
Hard rolling boil for 60 seconds.
-
Correct headspace (1/4 inch for jams).
-
Wipe rims.
-
Tighten rings properly (snugly but not with excessive force).
-
Correct processing time.
-
Remove and let cool, do not adjust rings.
-
Some jams take up to 2 weeks to set.
