Canning Pear Butter Recipe

About 20 medium pears
4 cups sugar
1/2 teaspoon nutmeg
1/3 cup orange juice

Core, peel and slice washed pears.
Combine pears and 1/2-cup water in large pot.
Simmer until pears are soft.
Put pulp through siever, do not liquefy.
Combine pear pulp, and other ingredients.
Cook until thick enough to roundup on a spoon.
Stir constantly to prevent sticking.
Pour boiling hot butter in hot jars leaving 1/4-inch headspace.
Wipe rim and place lids and rings.
Water bath in boiling water for 10 minutes for pints and quarts.
We use a steam canner. Time is the same.
Yield is about 4 pints for this recipe.
You can and we do double or triple recipe.
