Relish

Canning Relish Recipe

18 pounds of Cucumbers made 20 pints of canned relish.
We use Cukes of about 4-5 inches long.

Recipe (1 Batch)

6 pounds Cucumbers (8 Cups Chopped).
1 White Onion (1 Cup Chopped).
10 medium Green Peppers (4 Cups Chopped)
1 Tablespoon Turmeric
1/2 Cup Salt
1 Tablespoon Mustard Seed
1 Tablespoon Cinnamon
1 Teaspoon Ground Cloves
2 Teaspoons Allspice
2 Cups Brown Sugar
4 Cups Cider Vinegar
