12 Steps to Canning Pears Step 10, Heating up the Steam Canner Here in step ten we apply the heat to the steam canner. Start the heat up on high and continue until a column of steam comes out of the two vents on the bottom edge. The steam should be about 10 inches long and steady. Reduce heat sufficient to keep the steam flowing. To the right of the steamer Paul is boiling a kettle of pear nectar getting ready for the next batch for the steam canner. When the kettle boils for a few minutes we pour it into jars wipe the rims and seal. They will go into the steam canner as soon as the last batch comes out.
