Place the lid securely on the canner and tighten the dogs around the edge. Apply heat. When the steam comes out of the vent in a steady stream place the steam vent weight on the vent. When the pressure comes up to 10 pounds lower the heat to keep it a 10 pounds. Timing starts at that time. Pints require 35 minutes, quarts 40 minutes. Remember if you live a altitudes at 1000 feet or higher you need to use higher pressures. When the time has finished take the canner off the heat and wait for it to cool. DO NOT hasten the time using cold water on the canner.
