To make our noodle dish we prefer the "Extra Fine Cut-Plain" noodles. The Chin Chin Foods Company in Portland Oregon manufactures our noodles under the brand name of "Evergreen Brand." These noodles contain wheat flour, egg white, salt and yellow #5 coloring.
