Step Two, Soak Tapioca Pearls

You will need to soak the tapioca pearls in water before using. We put them in a quart jar and fill with water. Two hours soaking is enough but often we let them soak overnight just for convenience. Note we did a triple batch. Tapioca will expand about double size.
