Step 15, Ready the Steam Canner

We use a steam canner for a number of reasons. You can use a water bath as well. Because the steam canner is aluminum we add 2 tablespoons of vinegar to the 8 cups of water in the steam canner. The vinegar will prevent darkening of the canner. We apply heat getting ready for the pickle processing. After it boils turn the heat down until needed for the pickles. We used white vinegar.
