Step 5, Blanching the Beans

Here Paul has begun to blanch the green beans. Paul puts the beans into boiling water and they will be removed when the water boils again. If you want to put onions they should have been sautéed and added at this time. Paul has one pot boiling and the other has yet to boil. Paul takes the boiling pot to Bernice to fill the jars. One pot follows later as it boils. Each of those pots has 25 pounds on beans in them. We use some large 12 quart pots to can. But you use the ones you have.
