Step 11, Bring Water to a Boil

Bring water to a boil. At altitudes less than 1,000 feet above sea level process pints for 25 minutes, quarts 30 minutes, at a gentle but steady boil. For the steam canner timing begins when a column of steam 8 inches long comes out of the holes of the canner. Maintain an even, continuous flow of steam 8 inches long during the entire processing time. A medium boil is enough to do the job. You may have to add more water for subsequent batches. For the water bath canner timing begins when a full boil begins.
