Step 16, Dry Jars and Label for Storage

We will either wait for the jars to dry or use a towel. When dry we will mark the lids using a marking pen. We put on the year they were canned. They will be stored with the rings off. Several reasons. One, with the rings on, corrosion can occur under the rings making it difficult to remove. Second, you will use the rings for the next canning job. You buy new lids but reuse rings for may years. Store in a cool dark place. Light is an enemy of food canned in jars.
