Step 9, Salt Vegetables

We have a large stainless steel pot so we have prepared 3 batches at a time. Mix all the vegetables together. For each batch dissolve the salt in 8 cups of water and pour over mixture and add 1 tablespoon turmeric. Stir well to mix up mixture. Cover and let sit for three hours. The salt will release much of the liquid from the vegetables. After 3 hours drain. Then cover with water and let sit an hour. Drain again. Repeat water once more and drain. These steps will flush the salt from the mixture.
