10. Fixing Fish for Dinner

It looks like fish will be served to dinner this evening. We have lived in China long enough not to be surprised to see kitchen help working on the floor. Even with so many stainless steal tables this lady scales the fish on the floor. Abhorrent by Western standards, the Chinese view it as quite normal. The squatting I would find quite difficult for me. I would prefer to work standing up but squatting seems to be preferred in the Far East.
