How Can we Reduce Canned Fruit Floating?

  1. Heat food before packing into jars
  2. Don't pack food too tightly
  3. Use correct headspace
  4. Remove air bubbles before capping jars
  5. Prevent steam-pressure canner temperature from fluctuating during processing
  6. Cover jars with water in boiling-water canner
  7. Don't remove jars from canner too quickly after processing is complete
  8. Follow instruction about starchy foods absorbing liquid
